Whinstone Shiraz

2011 Shiraz

This Cool-Climate Shiraz has dense, medium red colour. Lifted, dense black fruits and wet earth. Big, rich and plush with lovely tannin depth and a robust structure. Quite a fruit-driven palate with a juicy core of dark fruits, nicely balanced, good texture, good flavour and delightful natural acidity and powerful tannins on the long finish. Elegant mouth-feel with superb integrated oak. Real aging potential.

A very honest, unique wine.

 






Whinstone Pinot Gris

2012 Pinot Grigio

Pinot Grigio is made in many different styles. Some winemakers say they copy the Italian style while others pay homage to the French. In making this wine we have basically disregarded the old world styles and started from scratch. The flavour and acid balance of the grapes are paramount and hence picking time is critical. Once picked, the winemaking process is very protective and simple so as to maintain the flavours from the vineyard, not to add to them.

Intense pear and lime aromas dominate but a delicate floral aroma adds complexity. The palate has very intense citrus fruit and great length of flavour. Crisp acidity balances the rich fruit and makes this wine very versatile when matching it to foods.

 






Whinstone Sauvignon Blanc

2012 Sauvignon Blanc

A traditional variety of white wine that displays regional variation. It is best grown in a cool climate where the grapes produced are refreshingly juicy, with a crisp acidity and intense fruit flavours.

The flavours in Sauvignon Blanc can range through fresh cut grass, asparagus, gooseberry, tropical and citrus fruit flavours but the wine maintains a clean fresh palate with a crisp acid finish. We call it our “morning, noon and night“ wine because it can be drunk anytime and pairs well with many dishes.

 







Whinstone Pinot Noir

2011 Pinot Noir

Pinot Noir should not be a chore to drink but should fill the mouth with its supple tannins and ripe fruit. We don’t follow extractive winemaking techniques but concentrate on maximizing body and aroma. The fruit is very lightly crushed and fermentation times are kept short. New oak influence is minimal.

Ripe strawberry and cherry aromas leap from the glass and lead to a beautifully supple palate with a rich fruit-driven mid palate and a hint of mocha oak character. The generous palate means this wine can enjoyed by itself but of course it will match a range of meat dishes.

 







Whinstone Chardonnay

2010 Chardonnay

Cool-climate Chardonnay can surprise the uninitiated with a range of flavour and incredible length of flavour not seen in wines from warmer climates. This Chardonnay has a very long ripening season but maintains its acidity to the end. The intensity of the fruit allows for the use of barrel fermentation and extended lees ageing which build complexity in the wine and creates a rich texture.

Lemon, pineapple and peach aromas dominate the nose, which also has a hint of vanilla. The palate has a luscious texture with intense fruit and lees characters, oak characters are in the background. Great length of flavour and a crisp finish

 






Whinstone Moscato

Moscato

This dry white wine grape is commonly grown in France and is particularly useful in that it is very frost resistant. Many people confuse this name with the sweet Muscats grown in various regions in Australia. However the Muscat family is large and diverse and this particular variety is widely drunk in France. MELON is named for the beautiful pink/gold blush on the bunches of grapes at ripening.

MELON has spicy, flinty flavours and aromatics and particularly complement shellfish dishes, especially fresh oysters.

Whinstone ELMS Cabernet Sauvignon

2001 Cabernet Sauvignon


Cabernet Sauvignon wines tend to range from medium to full bodied with higher tannin content than other red wines.

Flavours and aromas can include fruity characteristics such as plum, blackberry, cherry and blueberry, vanilla, tobacco and warm spice. A great accompaniment for a range of rich dishes, Cabernet Sauvignon is perfect paired with hearty tomato-based pasta dishes, lamb, red meats, dark chocolate and cheeses such as Cheddar, Mozzarella and Brie. The high alcoholic content of some Cabernet Sauvignons tends to accentuate the heat of spicy foods so this should be avoided.
